The holiday season is in full swing and many places across the country are experiencing a bit of a dip in temperatures. Some people have decided to break out their seasonal decorations and others are starting to do some shopping in the hopes of finding a great deal so they can present their loved ones with amazing gifts. There’s just something that’s so unique about this time of the year. Everything seems to finally slow down a little bit and people tend to enjoy the little things to an even greater degree.

One of the little things the team at Mighty Flame has been enjoying the most is taking the time to enjoy breakfast. If you’ve been following along with our posts for any amount of time you’ve probably seen that there’s one phrase in particular that we love using–”when you buy a propane tank, you unlock a world of culinary possibilities.” We believe that this is more true during the holiday season because it provides you with the opportunity to try something new and maybe even start a new holiday tradition!

Okay, So What’s For Breakfast?

Of course there are a number of different ways you could utilize your grill to make your family something delicious for breakfast, but this time of year calls for something that is truly special. You want something warm and hearty that sticks to your bones first thing in the morning so you can go about your day with the fuel you need. The recipe we’d like to share with our readers today is perfect for the weekends because you can enjoy your breakfast and then settle into the living room to watch a movie or you can head out to run a few errands and you’ll be smiling and satisfied either way.

And so, without further ado, we present you with our recipe for…

Delicious Grilled Cornbread

You’ll need a cast iron skillet for this recipe, of course, and we think you’ll absolutely love the flavor and texture of this grilled cornbread.

Here’s what you’ll need:

  • 4 tablespoons of butter
  • 1 cup flour
  • 1 cup cornmeal
  • 1 tablespoon sugar
  • ½ teaspoon baking soda
  • 2 tablespoons baking powder
  • ½ teaspoon salt
  • 2 eggs
  • 2 cups buttermilk
  • ½ cup canned corn (drained)

And with those ten simple ingredients, you’re off to the races! Chances are you probably already have most of this stuff in your pantry, so let’s get started.

You’ll start by combining all of your dry ingredients in a mixing bowl. Take the opportunity now to mix these ingredients up. In the meantime, grab a separate bowl and beat your eggs. Add the full two cups of buttermilk, then beat again until they come together perfectly. Pour the egg and buttermilk mixture onto the top of your dry ingredients and combine. Next add your corn–you can add more or less of this depending on your preference.

Don’t feel like you have to stir everything until it all comes together–instead, just focus on getting it pretty close. Working your dough too much at this point is likely to leave you with cornbread that’s a little bit chewy, so don’t worry about getting it perfect.

Fire Up Your Grill

At this point, go ahead and preheat your grill. You’ll want to heat it somewhere between medium and medium-high on one side of the grill and low on the other side since we’ll be utilizing both direct and indirect heat.

Go ahead and put your cast iron skillet over the warmer heat while you’re allowing the grill to warm up and then close the lid. The amount of time the grill needs to warm up is often the perfect amount of time to let your cornbread mixture get set up. When everything is ready to go, melt some butter in your cast iron skillet and pour the cornbread mixture in. Remove your cast iron skillet from direct heat to the cooler side of the grill.

On our grill, the cornbread turned out perfectly after about ten minutes, but your experience could be different. The best way to tell if things are done is simply to utilize a toothpick and stick it into the center. It’s similar to what you’d do when you make brownies in the oven.

Serve It Up Nice and Hot

Once everything is done, go ahead and cut your cornbread into slices and melt a bit more butter over the top. Serve with a side of bacon or breakfast sausage and a cup of coffee and your day is pretty much guaranteed to be off to an amazing start. It’s as simple as that!

Feel free to tweak our recipe to suit your tastes as well. Prefer your cornbread with a bit of zip? Add some cayenne pepper and chili flakes to your batter. Like when it’s a little sweeter? Drizzle some maple syrup over the top and dust with powdered sugar. Either way, the base ingredients make for a great starting point for those who love to experiment.
