When fall rolls around, a number of people all across the United States put the cover on their grill and roll it into storage until spring or summer returns. That’s one tactic you could take, sure, but if you’ve been following along with our blogs recently, you’ll probably know that we are huge advocates for keeping your grill going during autumn. Just because burgers and brats are often considered “summer foods” doesn’t mean that you have to simply give them up as soon as the weather starts cooling down!

Instead, our advice is to eat what sounds good! It just so happens that what sounds good might be some of your favorite fall foods. A Few Of Our Fall Favorites

Sweet Potatoes

At Mighty Flame, we’re pretty big fans of the white potato. Whether it’s a russet, a kennebec, or a King Edward, we love potatoes in all of their forms on the grills. Enjoying them in either wedged or baked form is something we do pretty often while we’re grilling. The best way to switch things up a bit and inject a bit of fall flavor into your dishes is by swapping those white potatoes for their sweet cousins.

Season your steak a little bit differently and grill up a baked sweet potato with a bit of salt, pepper, and butter, and you’re on the road to a wonderful (and wonderfully different) meal.

Squash

There’s just something special about enjoying squash in the fall. You can either throw it directly on the grill with some olive oil, then eat it that way, or you can grill it up and use it in a number of other recipes. (More on that in just a moment!)

Brussels Sprouts

Brussels sprouts have a reputation for being the vegetable that no kid wants to eat, but the truth of the matter is that they’re actually quite delicious! If it’s been awhile since you’ve had some for yourself, try throwing them on the grill until they’re slightly soft and then serve them with bacon. Believe it or not, brussels sprouts make for a perfect side dish when the main course is a bacon cheeseburger. You don’t have to take our word for it though–try it yourself and you’ll see what we mean.

Cauliflower

Cauliflower is another truly delicious and often overlooked fall vegetable. One of our favorite ways to prepare cauliflower on the grill is by slicing it into pieces, covering it in olive oil, seasoning with salt, pepper, garlic powder, and sage, and throwing it on the grill. Top the finished result with a bit of parmesan cheese and you’re off to the races.

Our Favorite Simple Recipes to Pull it All Together

AB Grilled C

What exactly is an AB Grilled C, you ask? Apple and brie grilled cheese, of course! This delicious sandwich is just enough out of the ordinary that it makes for an incredible fall treat by combining a few of the most delightful flavors that are often associated with fall. You could mix this recipe up in any number of ways to suit your personal preferences, but we really enjoy starting with a nice sourdough bread and some gruyere cheese. Grill up your apples and top with a bit of brie to finish things off perfectly.

This is one dish that we think you’ll keep coming back to again and again. Pair it with a bowl of homemade tomato soup and it just doesn’t get much better than that! What better way to enjoy a crisp fall day than with a grilled cheese and some tomato soup? This recipe just takes those staples and injects a bit more flavor for maximum fall goodness.

Tacos with Sweet Potato and Squash

Grill up some sweet potato and squash, toss a corn tortilla on the grill, and you’re in the beginning stages of creating a fall-influenced masterpiece of a meal. Season your taco with a dash of chili powder and top them off with some corn and your favorite cheese–our favorite is cotija cheese if you can find it, but feta works brilliantly as well.

We have made these by adding everything from ground beef to pulled chicken to bacon and you really can’t go wrong regardless of how you choose to make a meal like this. Everybody loves tacos, but simply purchasing a “taco kit” from the store isn’t always going to do the trick. This dish allows you to have tacos, but do them your way by incorporating fall flavors into your meal for an instant family favorite.
