Next, season your chops with freshly ground salt and black pepper, then transfer your marinade and your pork chops to a ziploc bag and allow them to marinate while your grill heats up.
After about 20 minutes, take the chops out of the marinade bag and discard whatever is left. Add another round of salt and pepper at this point and then throw them on the grill. Depending on the thickness of your chops, it will only take a few minutes per side. Thicker chops could take 3-4 minutes and thinner ones will require slightly less cooking time.
Now is the perfect time to break out your meat thermometer and measure the temperature. According to pork.org, “The National Pork Board recommends cooking chops, roasts, loins, and tenderloin to an internal temperature of 145° F, followed by a three-minute rest.” Who exactly is on this National Pork Board? We surely don’t know, but we agree that 145 is the perfect temperature for pork chops, so keep an eye on the temperature and you’ll be just fine, friends.
