If you’ve spent any amount of time in New England, you probably know all about the allure of a lobster roll. And what’s not to love? A soft, and yet still crunchy chunk of bread covered in delicious lobster meat and a bit of butter sounds like one of the most perfect meals a person could ask for! Available in abundance in Maine, Massachusetts, Vermont, New Hampshire, Rhode Island, and Connecticut, they are a staple of life in New England.

But what happens if you’re in, say, Kansas and you want to have a lobster roll? As you’ve probably learned by following along with our recipes and doing a bit of experimenting yourself, many foods are even better when you make them yourself. No, you might not be able to get a lobster fresh out of the ocean, but in many cases, your local grocery store or butcher just might be able to get you a lobster that’s incredibly fresh no matter where you are in the country.

The Recipe

The recipe for this one is pretty straightforward, but grilling lobster meat might be new to you. Not to worry, because we’ll walk you through it! Here’s what you’ll need:

  • Enough lobster to make your preferred number of rolls
  • Brioche buns (good hot dog buns will do the job nicely)
  • Olive oil
  • Butter
  • Salt and pepper
  • Lemon juice

That’s all there is to it! We’ll be making a warm lobster roll with butter, but there are a handful of variations you could try if you choose to do that (more on the different variations below).

Start by preheating your grill to medium high heat. In the meantime, clean your lobsters and cut them in half. Start by adding just a bit of olive oil to your lobster and then toss them on the grill with the shell facing downward. This is the key to making sure that things end up perfectly.

Preparation tips on Food and Wine note that you should grill your lobster for about 5 to 7 minutes and that “if the shells start to blacken, move them to a cooler part of the grill.” On our propane grills, seven minutes seemed to be the sweet spot, but of course your grill might vary. Lobster tails cook fairly quickly, so be certain that they are cooked all the way through and then give the claws another two to three minutes. Use your thermometer to test the temperature, but your thickest piece of lobster meat should be cooked to 145 degrees. As your lobster finishes up, add a bit of butter to your brioche buns and toast lightly, removing when you get a bit of crispiness.

Remove the lobster meat from the shells and brush with melted butter, a dash of salt and pepper, and just a touch of lemon juice. Finish by topping your bun with the grilled lobster meat and serve hot.

The Chips

Lobster rolls are best served with french fries or potato chips, but since we’ve done a handful of great french fry recipes before, we’re going to give you a great recipe for potato chips. It’s pretty easy. All you need to do is slice your potatoes thinly using a mandolin slicer, coat them with a bit of olive oil, salt and pepper, and grated parmesan cheese. Toss them onto a grilling pan and cook on each side for 4 to 5 minutes.

Serve them while they’re hot!

Variations

As we mentioned above, there are a number of variations that you could make to your lobster rolls. Some people prefer to serve their lobster meat cold. Others prefer mayo to butter. Many even enjoy adding diced celery to their lobster rolls for a bit of extra texture.

The takeaway is that it’s entirely up to you. If you’ve never had a lobster roll before, do a bit of research and choose the ingredients that sound best to you and go from there. The end result is sure to be a delicious success!
