Season With Salt and Pepper

There are about as many grill seasonings out there as there are people who own grills. In other words, there are millions of different options. Some claim to be made using a secret ingredient (likely to be the same thing in many of the other steak seasonings) while others assert that they’re blazing a new trail and you just have to try their take on the classic steak seasoning.

 

Well, dear friends, we’re here to tell you differently. A bit of salt and pepper will do the trick just fine, allowing the flavor of the steak to stay front and center where it belongs. Just add this classic combo when you take your meat out of the fridge. Speaking of which…

Rest, Rest, Rest

One of the best things you can do for your steak is to let it rest. About half an hour before you throw your steaks on the grill, pull them out of the fridge and let them come a bit closer to room temperature. Some out there insist that you need to get as close to room temperature as possible, but we think that’s just splitting hairs. Just remember to remove your steaks from the refrigerator half an hour before cooking (this is a great time to season them up as well) and you’re all set.

Likewise it’s a good idea to let your steak rest after you pull it off of the grill. The myth states that it’s to allow juices to be re-absorbed throughout your cut of meat, but the truth is that it’s just a good idea to let your steaks come to cool off a bit. The amount of time that it takes to plate the table and get everything set up is plenty of time.

Reverse Searing

One other technique we’ve recently become fond of is known as reverse searing. Traditionally you’d throw your steak on a hot part of the grill at the beginning of cooking to get some nice sear marks. Sear marks and crust do make the meal, after all.

The reverse sear is when you cook your steak until it’s almost the temperature you want it to be, then transfer it to the hot part of the grill and finish things off with a sear on each side, rotating it before flipping to get crosshatch grill marks on each side. This fully ensures that you end up with the delicious sear you want your steak to have. You don’t have to worry about ruining the sear marks or losing that nice crust when you tackle the sear at the very end of cooking. And yes, it’s as easy as it sounds.
