Grilled Chicken Quesadillas

Is there anything better than a bit of spiciness and a lot of gooey cheese when it comes to food to enjoy during a football game? We don’t think so! That’s why we’ve come up with a recipe that makes things quick and easy. Here’s what you’ll need:

  • Chicken breasts
  • Flour tortillas
  • Olive oil
  • Cheddar cheese
  • Salt and pepper
  • Red pepper flakes
  • Chili powder

Start by preheating your grill to medium-high heat and oiling your grates. Season your boneless, skinless chicken breasts with salt and pepper, red pepper flakes, and chili powder. Cook for about ten to twelve minutes on each side or until they are fully cooked through. Set aside to cool, then pull the chicken apart to suit your tastes.

Next, brush your tortillas lightly with olive oil and add a bit of chicken and plenty of cheddar cheese, then top with another tortilla. Grill for two to three minutes on each side and continue this process until all of your chicken is gone. Of course you could also continue grilling using only tortillas and cheese for any vegetarian friends in attendance at your game.

Serve with salsa, guacamole, or queso on the side and you can rest assured that people will be talking about your food just as much as they’re talking about the game (if not more!).
