Go ahead and heat another burner on your grill to high heat.

When your potatoes have about 15 minutes left, go ahead and take your steaks out. Your goal initially is to get a great sear on the outside of the steaks. It should take about three minutes per side. You can also, of course, rotate your steaks to get that nice “crosshatch” effect if you prefer to do that. Be sure to keep the lid open while you’re doing this.

When your steaks are seared on both sides, turn the heat down to medium-low and transfer your steaks to a cooler part of the grill. Close the lid and let your steaks cook for two minutes or so, then open the lid, flip them, and cook for two more minutes. At this point, they should be cooked to a nice medium-rare, so if you prefer your steak cooked differently, you can reduce the amount of time on the grill with the lid closed for something more rare or add a few more minutes if you prefer your steak well done.

Keep in mind that your steak will continue to cook for a few minutes after you take it off of the grill, so don’t worry if they don’t look quite done. You should also let your steaks rest before serving them.

To finish things off, slice your potato in half and add butter. Your steak should be perfect as is.
