Chicken Satay Kabobs

One of the best things about a good kabob is that you get your entire meal on a stick. No side is necessary, since you get everything at the same time! This recipe adds a bit of a twist, adding in a delicious satay flavor that comes out perfect on the grill. Let’s get started.

The night before you cook your chicken satay kabobs, you’ll want to combine a number of the ingredients in a plastic bag and then throw it back into the refrigerator to marinate. This recipe, like many of the other ones you’ll find on our website, has been designed to be accommodating of you if you choose to swap out certain ingredients and omit other altogether. The end result will be a dish that you love, tailored to suit your tastes!

Combine pieces of boneless, skinless chicken breasts cut into cubes, a pinch of salt, ¼ cup of orange juice, a dash of cayenne pepper, two cloves of minced garlic, onion powder, a few splashes of both vegetable oil and soy sauce, a squeeze of honey, about ⅓ cup of teriyaki sauce, and ⅓ cup of peanut butter.

While this is sitting, rustically chop up pieces of sweet onion, bell peppers, and mushrooms into approximately 2” pieces, matching the size of your chicken pieces. Toss everything in your resealable bag and let it sit overnight.

Now comes the fun part. When you’re ready to grill the next day, remove your ingredients and begin to place them on wooden skewers. At this point, you can add a dash of salt and pepper, some cayenne pepper, or even some coriander.

Grill your skewers for about 6 minutes, turning at the 4 minute mark and ensuring that your chicken is cooked all the way through.

Serve your chicken satay kabobs on their skewers directly on the plate, or remove them and serve over quinoa with cashew pieces for something truly unique and delicious.
