Grilled Salmon and Asparagus on a Bed of Rice

All too often, people across the country think that grilling fish is going to be a difficult task to undertake. The truth of the matter is that with a bit of preparation and something resembling a plan, you’ll often be able to crank out a culinary masterpiece on your first try (and if not on your first try then you’ll definitely get it right on the second).

All you need are some salmon fillets, salt and pepper, seasoned salt, and garlic powder. Start things off by preheating your grill to medium, then head back inside and throw some rice on top of the stove. While the rice cooks you can get the rest of the process started since rice is such a “set it and forget it” type of thing to cook. In the meantime, cut your asparagus into chunks about 2” in length. Season them with salt and pepper, seasoned salt, and garlic powder as well, then put them in a foil packet with a bit of canola oil.

Once the grill is preheated, lightly oil the grates, then add your salmon. Cook it for 5-8 minutes per side depending on the size of the salmon you’re grilling. In 10 or 15 minutes you’ll have brilliantly grilled salmon and your asparagus will be done as well. If you timed it right your rice should be finishing up as well.

To complete the dish, plate your rice, then add the salmon filet and some asparagus on top. Squeeze a fresh lemon or lime over the top and chow down. It doesn’t get much simpler than that!

Balsamic Grilled Steak Salad with Peaches

For the second recipe we’d like to share we’ll turn to the folks over at Delish. Their recipe for Balsamic Grilled Steak Salad with Peaches is a winner no matter which way you look at it. The total time it will take you to make this dish varies a bit, but in our experience it took just over half an hour–and most of that was prep work!

All you’re doing essentially is grilling a skirt steak and adding it to a delicious salad with homemade dressing. Who wouldn’t love that?

We put our own twist on this recipe by throwing the sliced peaches on the grill as well just to bring out some extra flavor and give the dish a great texture and the good news is that we can’t recommend this method highly enough! Whichever route you take, the end result is a delicious and healthy meal that you can make quickly at the end of a long day, and that’s about as good as it gets!

Crosshatch Hot Dogs on Grilled Croissants

This amazing recipe from our friends at Food and Wine is for Crosshatch Hot Dogs on Grilled Croissants and it’s a winner. (As a matter of fact, you could say something like “winner winner hot dogs and croissants dinner,” but you don’t have to.)

The introduction to the recipe notes that this dish was inspired by one that was “discovered at a Manhattan Chinatown restaurant” and because “they’re cut in a crosshatch pattern, [it] makes the franks cook even faster.” The mustard-brushed croissant is the icing on the cake (or the croissant on the hot dog in this case).

Isn’t this too close to the burgers and brats we’re trying to avoid, you ask? Great question, but the answer is that this is something entirely different. Yes, it’s a hot dog, but it’s so far elevated that it’s a joy to eat.
